Categories: Cookie Holiday
Yield: 1 Servings

1/3cHoney
3/4cSugar
1/2tsFinely shredded orange peel
1/2cOrange juice
1 2 inch cinnamon stick
3 Whole cloves
1cGround walnuts
1cMargarine or butter
3cAll purpose flour
2tbBrandy
3/4tsBaking powder
1/4tsBaking soda
1/2tsGround cinnamon
1/4tsGround cloves
1/4tsGround nutmeg
1/2cFinely chopped walnuts

For filling, in a small saucepan, combine honey, 1/4 cup of the sugar, 1/4 cup of the orange juice, cinnamon stick, and whole cloves. Bring to a boil. Reduce heat; boil gently 5 minutes, uncovered. Strain syrup, discarding spices. Remove 1/4 cup of the syrup. Set aside remaining syrup.

Combine ground walnuts and the orange peel in a medium bowl. Stir in the 1/4 cup of syrup; set aside.

For dough, in a large mixing bowl beat margarine for 30 seconds or till softened. Add half of the flour, remaining sugar, remaining orange juice, brandy, baking powder, soda, ground cinnamon, cloves and nutmeg. Beat till well blended. Beat or stir in remaining flour.

Form dough into 1-1/4 inch balls. Using your fingers, press a hole in center of dough. Place about 1/2 tsp. of nut filling in the hole. Bring dough up around filling, enclosing it completely. Place seam side down on greased baking sheet. With a knife, crisscross the top forming an X, scoring surface only. Repeat with remaining dough and filling.

Meanwhile, warm reserved syrup gently over low heat; do not boil. Brush tops of hot cookies with warm syrup or dip tops into syrup. Sprinkle with finely chopped nuts. Place on wire rack to cool completely. Makes about 40.
